Processing
The honey is gathered by approximately 1 000 small-scale beekeeper families in an area covering 1 200 km from Melipilla (close to Santiago) to Chonchi (in the south of the country). The gathered honey is subsequently sent to Paillaco- Valdivia region- where it is divided and controlled.
Producer : Chile:One-hundred-twenty families in the Valdivia region work for Apicop. Twenty percent of the beekeeper families are of Mapuche origins: this indigenous population from Chile has fought against Spaniards until XIX century and is now, as a result of aggressive colonial economic models and illnesses, a minority of only 130 000 people living in poverty and no basic rights.
